The wine that will emerge will be put in oak barrels selected for each appellation according to the organoleptic character and tannin content. The oak barrels, from different cooperage are Selected according to the origin of the wood, the drying time of this one, and the quality of the toasting.


It will remain in barrels for an aging for one and a half to two years.

Then, these wines are bottled without fining and no filtration. To keep the structure of the wine, the raking and the bottling are done by gravity, so, no pump are used.
